- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground nutmeg
- 1 cup shortening
- 2 cups sugar
- 2 eggs
- 1 cup raisins
- 3⁄4 cup chopped nuts
- 1 teaspoon grated lemon rind
- 1 tablespoon lemon juice
- 1 1⁄2 cups all-purpose flour
- 3 cups quick-cooking oatmeal
directions
- In a large mixing bowl, combine baking soda, salt, nutmeg, and shortening. Mix.
- Continue mixing, and slowly add 1 cup of the sugar. Then add 1 of the eggs.
- Repeat with the 2nd cup of sugar and the 2nd egg.
- Add raisins, nuts, lemon rind, and lemon juice. Mix.
- In a separate bowl combine flour and oatmeal. Mix.
- Slowly add flour/oatmeal mixture to first bowl while mixing.
- Once dough is well mixed, chill in the refrigerator for about 1 hour.
- Roll dough into 1-inch diameter balls. Place onto a baking sheet 3 inches apart on center.
- Bake at 350 for 12-15 minutes, or until dough is just set in the center. Cool on wire racks for about 30 minutes.
