  • In a large mixing bowl, combine baking soda, salt, nutmeg, and shortening. Mix.
  • Continue mixing, and slowly add 1 cup of the sugar. Then add 1 of the eggs.
  • Repeat with the 2nd cup of sugar and the 2nd egg.
  • Add raisins, nuts, lemon rind, and lemon juice. Mix.
  • In a separate bowl combine flour and oatmeal. Mix.
  • Slowly add flour/oatmeal mixture to first bowl while mixing.
  • Once dough is well mixed, chill in the refrigerator for about 1 hour.
  • Roll dough into 1-inch diameter balls. Place onto a baking sheet 3 inches apart on center.
  • Bake at 350 for 12-15 minutes, or until dough is just set in the center. Cool on wire racks for about 30 minutes.
