Oatmeal Pancakes

- 1 1⁄2 cups oatmeal
- 2 cups buttermilk
- 2 eggs, beaten
- 1⁄2 cup flour
- 1 teaspoon sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
directions
- Mix oats with buttermilk.
- Add eggs and dry ingredients.
- Fry on lightly greased griddle until edges are cooked and center bubbles.
- Turn and brown.

These pancakes were good - if I were ratingon taste alone, they might get a 4. But the proportions were significantly off, as the other 2 chefs have mentioned, so I am bumping down one star. I got 15 good sized pancakes, but that was after adding a significant amount of flour to reach the correct consistency.

These were very good, but I also feel the proportions were off. I used old-fashioned oats, so I put everything in the blender to grind it up. I made half the recipe (3/4 cup oats, 1 cup buttermilk, etc), and had to add an additional 1/3 cup of oats to get the right consistency. Very good flavor, however. My daughter loved them.
