- 1 onion, sliced
- 1 cup mushroom, sliced
- 2 cloves garlic, minced
- 1 cup rolled oats (I used instant)
- 7 cups vegetable broth (or chicken broth)
- 1 (16 ounce) can stewed tomatoes
- 1 (8 ounce) can tomato sauce
- seasoning (of choice)
- 1 cup low-fat milk
directions
- Saute onion, mushrooms& garlic in a bit of the broth, about 5 minutes.
- Stir in oats, broth, tomatoes& tomato sauce.
- Bring to a boil.
- Reduce heat and simmer 5 minutes.
- Season and stir in milk.

Wow this was wonderful. I did make some changes for myself, and still came out with a wonderful, hearty, creamy, deliscious, low cal meal. I added veggie italian sausage that i had browned before the onions, I did not have tomato sauce so used salsa as recommended earlier, and used 2 T miso + H2O instead of broth.

This is a very nice meal and a great way to use oatmeal! I've made it a few times and you can just experiment with the vegetables and change the taste of the soup by doing so, so you won't easily get bored with it. And also I find this a very soothing meal for your bowels, if you've eaten something that was spoiled or if you have a (stomach) flue etc, give this meal a try.
