Okra Patties

"My favorite way to use okra, and besides...it is good. I usually make this in the summer when okra is plentiful, but I have also used frozen okra successfully. NOTE: I should have put this notice here before, but just didn't think! Okra should be chopped by hand. The food processor makes it way to slimey to work with."

  • Combine okra, onion, salt, pepper, water, and egg and mix well.
  • Mix flour, baking powder, and cornmeal and add to okra mixture, mixing well.
  • Heat oil to medium-high, drop okra by heaping tablespoons into hot oil and cook until brown on both sides.

  2. Wow, simply delish! I have never made fried okra from scratch before! No more store bought in this house! I put in a little bacon grease in the egg mixture for added flavor. Also, I didn't chop my okra fine.
     
  3. I had about a pound of fresh okra, and wanted to try something other than regular fried okra. The mincing by hand was a bit tedious, but really managed the "slime factor". I enjoyed these little patties. As an experiment, I may try it without the baking powder next time, to see if I get more of the crispy fried okra texture throughout rather than a bread/cake texture in the middle.   4. made this recipe with frozen okra. Added 1/4 cup flour with corn meal and 3/4 cup cornmeal. Added garlic(1/4 tsp) Also baked them at 350 degrees in the oven on a greased baking tray for 1.5 hr(until they were brown being careful not to burn them). Used olive oil cooking spray . These turned out really nice...had them with some hot sauce and the kids had with ketchup. Thanks for the recipe
     
  5. This is amazing my wife dose not like black pepper so I substituted it with 1/4 tsp. ground red pepper.

Tweaks

  1. These were great! Easier than fried okra but with similar results... I used a few garlic cloves instead of onion, and added a bit of cayenne pepper, and I thought these were really satisfying. I thought they were nice and moist, although I agree with adventurousbeginner's suggestion: these would be awesome with a remoulade.
     
  2. This was yummy. I substituted ground almonds for the corn meal as I didn't have cornmeal. It couldn't have been better so the substitute worked. I made 1/4 the recipe and it was ample for two. I just chopped the okra and onions not relly fine and it was good. I used olive oil to cover the bottom of the pan. Ummm!
