Old Fashioned Peach & Blueberry Cobbler

  • In a large saucepan, combine brown sugar and cornstrch; stir in peaches and cinnamon.
  • Cook& stir over med heat until mixture boils and thickens.
  • Stir in blueberries.
  • Cover and set aside.
  • Stir together flour, sugar, baking powder and salt.
  • With a pastry blender, cut in butter until mixture resembles cornmeal.
  • Add milk and vanilla; mix lightly with fork until just combined.
  • Bring fruit mixture to a boil; pour into a 4-qt casserole.
  • Drop large spoonfuls of batter onto fruit mixture.
  • Bake at 375 for 25-30 minutes or until batter tests clean.

  1. This is a very good cobbler recipe, and the colors together were so lovely. I was intrigued by the brown sugar instead of white sugar. The sugar gave it a suprisingly good taste. I didn't change anything in this recipe. I used frozen peaches (no sugar added), and the sweetness was just right for my taste. Thanks for sharing this great recipe. I will definately make it again.
     
  2. We loved this dessert! The brown sugar was a nice change with the fruit and not overwhelming. The topping is more like a scone, we put coarse sugar on top for those that wanted sweeter (and those that didn’t could brush off). Made enough for 2 nights for 4 people.
     
  3. Well I Have Wanted 2 Make Either a Cherry Cobbler Or a Peach Cobbler Now For Many Years. I Was So excited. I Made The Peach Cobbler Last Night & It Looked Delicious. I just Do NOT like The Taste Of The Batter Part At All :-( . What a Disappointment. So, I am Going To Change The Recipe & “Tweak It” 2 Suit My TasteBuds. I am going 2 Mix Up a WHITE Cake Mix & I Will Pour That Over The Peaches Instead. I’m Sorry ?? I Craved This Peach Cobbler for So Very Long, But The Batter Part Just Was NOT Good Tasting To Me. I ate 2 spoonfuls & just Couldn’t Eat AnyMore. I followed The Recipe Very Closely & Did Everything Properly So It’s Just NOT Good Tasting To Me At All. ?? Sorry, But Do U think My White Cake Mix Swap Idea Will Work Out ??? Oh, & is There a Cobbler Recipe PERHAPS That Calls For BIsqcuit Mix ??? Just Wondering.
     
  4. This is a great recipe. I used fresh peaches and blueberries and was pretty generous with the cinnamon. I did find that there was a lot of cobbler dough at the end so next time I might make 2/3rds of that recipe instead of the full amount. I think a light sprinkle of coarse sugar mixed with cinnamon would be a nice touch to the cobbler topping too. Very easy to make and loved the use of the brown sugar mixture with the juice. Thanks for sharing. Made for the Under Cover Photo event in the Cooking Photos forum.

I love to cook and so I am thrilled that I found recipezaar. I work as an educational assistant in a food school so I am around food all day long. I have four children, three of which have already flown the coop so to speak but I still have my 'baby' at home. (He's 21). I am lucky in that I have my summers off so I spend a lot of time trying new recipes and catching up on my reading. I also play soccer in a ladies league to stay in shape.
