Old Fashioned Potato Salad

"This family favorite has been passed down for several generations. My daughter told me she'd tried all kinds of recipes and had never found one to top this one. I guestimate on quantify, but here are the ingredients. This is not a German potato salad that is largely vinegar. You don't want to detect that the vinegar is even there, yet without it you will not have a superior salad."

  • Boil, peel and dice the potatoes.
  • Place in large bowl.
  • Into the bowl, add the rest of the ingredients in whatever amounts you prefer.
  • Go easy on the vinegar.

  1. I too inherited this recipe from my mother with minor variation. As the other reviewer noted, I added chopped hard boiled eggs to the mixture and my mom added celery seed as well. She did not add vinegar as there is vinegar in prepared mustard. The only change I myself made is to add a small can of chopped or sliced ripe olives. Any prepared mustard is fine but use the best mayonnaise you can buy, which I believe is Best Foods or Hellmans. That was my mother's rule of thumb as well. This is awesome potato salad loved by all who've eaten it.
     
  2. This is the same assortment of ingredients I learned from my mother for potato salad, although I also add in some diced, hard-boiled egg and occasionally a bit of garlic powder. If I'm out of relish, a bit of juice from a jar of pickles works, too. It's a big hit with dh. ;o) I made it tonite with your Spinach Casserole Dee-lish #62408 to serve with bbq ribs and cornbread; great dinner!

There I am sitting in front of the computer, one of my favorite spots in the house. When I'm not at the computer, I enjoy cooking and entertaining. See my icon? It is an old Royal typewriter. My father had one just like it that he gave me when I was in college. It had one key that stuck, but I typed all my term papers on that old thing. Whenever I see that icon I remember those happy days.
