One Bowl Chocolate Cake

  • Preheat oven to 350 degrees.
  • Grease and line the bottom of a 9" square cake pan with waxed paper.
  • In a mixing bowl, sift together the first six ingredients.
  • Add the rest and blend on low speed, or by hand, till its nicely moistened.
  • Mix further for three mins on medium speed.
  • Pour mixture in the prepared cake pan.
  • Bake 35 minutes.
  • Cake should rebound when gently pressed in the centre.
  • Cool in pan for 10 minutes before inverting on to a plate.
  • When completely cool, cover with chocolate frosting.
  • Frosting: Cream butter, salt, vanilla, instant coffee and half of the sugar.
  • Now use up all the cream and sugar in alternate additions till a rich gloss is reached and the frosting is of a thick spreading consistency.

  2. This went very well at my home this evening. Even though I'm trying to lose weight, I couldn't, just couldn't stop myself from eating 2 good sized pieces of this cake. I loved it. My friends' wiped the plate clean! The cake went really really well. It really came out nice and "spongy" and just seems to be so good, I will have to repeat this one. I did not do the icing for the cake, I just made the cake. The cake is wonderful. A 100% keeper! In the cake, I substituted the butter with margarine. Otherwise, I did use all the other ingredients. This is a real good cake. I baked it in my AMC Dutch Oven. It took an hour to bake, but the wait was well worth the time! Thank You for sharing! I plan to make this again very soon:)

I play a lot of scrabble (Any potential scrabblers out there?!) and hate cooking in summers. Temperatures run into the 40 degrees cent. range and our kitchens are not airconditioned!! I love travelling and, given a chance, would take a month long luxury cruise which touched exotic ports! Aaaahhh....pure bliss!!!!
