One-Egg Pound Cake

- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 cup sugar
- 1 teaspoon salt
- 1⁄2 cup butter, cold
- 1 egg
- 1 cup milk (approximately)
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
directions
- Preheat oven to 350 degrees F (175 degrees C); grease and flour an 8x4" loaf pan.
- In a large bowl, mix flour, baking powder, sugar and salt.
- With a pastry cutter or your fingers, cut in butter.
- Break the egg into a measuring cup and then fill to the 1 cup line with milk.
- Add the milk mixture to the dry ingredients and beat well.
- Add vanilla and lemon extracts and beat until well-blended.
- Pour batter into the prepared pan and bake for 30 minutes, or until a toothpick inserted into the center comes out clean.

This recipe is a life saver when my last 2 eggs ended with 1 egg after 1 was tightly glued to the egg carton & ruined during process of extracting it out. I successfully made this & used 50 minutes asked suggested by genie & rickie. I too had doubts about 30 minutes, then reading comments here i added another 20 minutes. Taste better too the next day after refrigerated it. I was expecting a small cake but it was quite large more than enough for 2 adults.
