  • Preheat oven to 350°F Spray a 8x4 bread pan with cooking spray or lightly oil.
  • Sift flour, baking soda, salt and spices together.
  • Cream the margarine and sugars.
  • Add bananas, soy milk and vanilla.
  • Add the wet ingredients to the dry.
  • Mix til combined.
  • Pour batter into pan.
  • Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.

  1. Delicious! This recipe is so forgiving and versatile! I've made it at least 6 times now, always decreasing the white and brown sugars to 1/2 cup each due to other reviews. Today I made it substituting vegan mayonnaise & water for the soy milk & vinegar because I didn't have the soy milk. Almond and rice milk work just as well, BTW. Also used 1/4 cup coconut oil and 1/4 cup vegan margarine today to see how the coconut oil would work. It's been delicious every time, and tonight was no different! My milk & egg allergic son loves this recipe!!

  3. It is indeed a very good recipe! Versatile too, you can sub different sweeteners, decrease them, use whole grain flour, etc. :)
     
  4. good recipe. i used whole wheat flour, 1/2 cup TOTAL of raw sugar and added chia seeds and flax seeds. we also threw in some chopped strawberries, at the suggestion of my three year old and made this in muffins. (bake time about 25 minutes for muffins).<br/>excellent recipe - thanks!

Tweaks

  1. Like a previous reviewer I cut out the brown sugar and subbed half the margarine with applesauce. I think it was still too sweet, I'll probably cut the sugar in half again next time I make it. Very moist though with the applesauce, much better than our usual good-but-dry loaf. Thanks for sharing.
     
  2. Delicious! I made a couple of changes. I cut the sugar in half (eliminating the brown sugar) and used 1/4c margarine and 1/4c applesauce instead of the full margarine. Walnuts were a great addition too!
     
  3. Perfect! I made a few changes based on preference and what I had on hand. I used 1/2 cup each of the sugars, and 1 cup of wheat and 1 cup all-purpose flour. Also I used 1/2 cup canola oil instead of margarine and a tsp. of baking powder. This is a wonderful recipe, and it doubled nicely. Which was just as well, because one loaf practically disappeared soon after coming out of the oven ^_^
     
  4. Oh my goodness. Simply amazing bread. It's the first time I've tried it and just came out perfect. I've substituted the vinegar and baking soda with yeast, and added some more soy milk. It only took 50 minutes in the oven. A very nice breakfast recipe!
     
  5. well I didnt find this to be very good. However, I decided to substitute blackstrap molasses for the white sugar and gluten free flour so it could be good without these changes...Oh well, won't be trying it again but at least I know what NOT to do. :)
