Orange Beef and Rice

- 1 tablespoon oil
- 1 lb top round beef, cut into 1/2-inch cubes
- 1 small onion, diced
- 2 garlic cloves, sliced
- 1⁄2 lb sliced mushrooms
- 1 cup shredded carrot
- 1 (6 ounce) package wild-and-white rice pilaf mix
- 1 cup orange juice
- 1 cup beef broth
directions
- Briefly heat oil in large, deep pot over medium-high heat. Add beef and onion. Cook, stirring frequently, for 5 minutes. Add garlic, mushrooms and carrots. Cook another 5 minutes.
- Add pilaf mix, orange juice and beef broth; bring to a boil, then reduce heat and simmer, covered, for 20 minutes or until liquid has been absorbed.

This is such a good Beef recipe. I wasn't sure I was going to like the orange flavor but it sounded so interesting I tried it. You may not believe it but I didn't have OJ so I used Sunny D. LOL....worked for me! It was yummy! Left over was still good too. This is going to be a regular. :) Thanks for posting!
