Orange Ginger Carrots

"This is the best glazed carrot recipe. I came across it in my grandmother's receipts. It will intensify the flavor if you use frozen orange juice and make it strong. It's sweet, tart, and buttery."

  • Cut carrots into 1/2" angle slicesCook carrots until tender-crisp in sauce pan and drain.
  • Mix sugar, cornstarch, salt,ginger, and orange juice together and pour over carrots.
  • Cook for 3 to 4 minutes stirring constantly until thickened.
  • Add 2 tablespoons butter and toss.

  1. This is really good. The addition of corn starch makes the sauce glisten and cling to the carrots better. My family loved it. Also I made double strength orange juice from frozen consentrate. Needs no sweetener.
     
  2. This really doesn't go with my salsa chicken tonite, so I may just have to eat these all by themselves. They are scrumptious!!!!! The only thing I would mention is that you might not want to heavily salt them while cooking, or if you do (I do), zap the salt in the recipe. I'll be making these again and again, and it will go down as one of my all-time favorite carrot recipes.

I learned to cook from my dad. He taught me about seasoning food, and how to DIY. Subseqently, I make my own yogurt cheese, bread, and dry alot of foods to preserve them. I don't can anymore since moving to the city in a small apartment. I have fibromyalgia, so frequently put off the clean up until I can rest for an hour or two. I get so involved when cooking, that I find I don't notice the pain.
