ingredients
- 1 cup orange juice
- 1⁄2 cup sugar
- 1 egg
- 3 tablespoons vegetable oil
- 1 cup whole wheat flour
- 3 teaspoons baking powder
- 3 teaspoons salt
- 3 teaspoons baking soda
- 1 cup rolled oats
directions
- Beat orange juice, sugar, egg, and oil until well blended.
- Sift dry ingredients together and add all at once, stirring only enough to moisten.
- Pour into greased muffin tins and bake at 400 for 12-15 min.
- or until golden brown.

Wonderful!! These muffins came out so light and flavorfull. They have a great orange taste that was a very nice change from the usual. I didn't change a thing in this recipe. It was very easy to follow and very easy to do! Thanks, Diggy for this keeper!! I would like to give you another blue ribbon!! :-) -
I think there is a mistake in this recipe. I went against my better judgement and put in the 3 teaspoons each of salt, baking powder, and baking soda - wow was it salty! I made it again using only 1 teaspoon of each. It tasted pretty good that way, but next time I think I'll use only 1/2 teaspoon of salt. -
I think there might have been a mistake with recipe, as I used the 3 tsp salt, 3tsp baking soda, and 3 tsp baking powder, the muffins are not even edible. I think the recipe may have to be changed.

This recipe isn't even worth fiddling around with. WAY too much salt, baking powder, and baking soda!!! The batter is runny and they all ended up in the garbage. Find another orange muffin recipe. -
I too had to throw mine out. I used only 1 tsp. salt but they were still bitter and they fell in the middle.
