Oreo and Peanut Butter Brownie Cupcakes

"I found this while searching the web and decided to try it today. My youngest son told me it was the best he ever had and my brother went so far as to say it was oreogasmic...so I'll let you decide. It is best to spay the cupcake liners so the brownies don't stick."

  • 1 (18 ounce) box brownie mix, 8x8 inch size
  • 13 cup water (use amount specified on your brownie mix)
  • 13 cup canola oil (use amount specified on your brownie mix)
  • 2 eggs (use amount specified on your brownie mix)
  • 24 Oreo cookies
  • 12 cup creamy peanut butter

  • Preheat oven to 350f (180c) degrees and line a 12 muffin cup baker with paper liners.
  • Prepare brownie mix according to package directions. For each cupcake cup spread 1/2 teaspoon of peanut butter over each Oreo cookie and stack them on top of each other. Place oreo stacks into the cupcake lined muffin cups. Spoon 2 tablespoons of brownie batter over each stacked oreos and let it run down the sides of the cookies. If you have left over brownie batter, bake separately in a separate baker or muffin tin. Bake cookies and brownies for 18 to 20 minutes, until brownies are cooked through. Let cool completely then serve.
  • Makes 12 servings.

  1. My tins are the old-fashioned type so recipe made 24! I used only 1 cookie per cup, generous dollop of peanut butter, and slight 2 tbsp brownie batter--bake 25 minutes. PERFECT!!
     
  2. These were a big hit in our home. I used silpat cupcake liners and also sprayed them. I added just a bit of batter in the bottom of the cup before place the cookie stack in and I had no sticking issues. Don’t use a brownie mis with chocolate chunks! I had lopsided cupcakes!

  3. Meh. Hard to give it a fair review. The Oreo baked onto the paper liner, so it had to be dissected prior to consumption. All of the Oreos ended up in the trash with the bottom of the paper liner. Might try again with a dose of brownie mix under the Oreo & a foil liner... or maybe just grease the tin & hope I can get them out in one piece. Basically my end result was the top-half of a Betty Crocker brownie... could have just made the brownies & saved myself the money & effort. Going with 2 stars. If able to pull off an intact final product, I will revise.
     
  4. Amazing! The peanut butter to Oreo ratio is perfect. I didn't use paper liners, instead coated the muffin tin with cooking spray. They were a little difficult to remove, but it did work.
     
  5. Oh, my! How much better can you get than Oreos, peanut butter and brownies in one dessert! I did three in cupcake holders and did the other 9 in a 9x9 container that made for some delicious brownies. I did have to bake quite a bit longer to get the brownies cooked thru.

Tweaks

  1. For a more gooey variation only cook for the minimum time (even if there is still a little bit on the cake tester). If they feel a little over done just micro them for about 10 seconds....they are still the bomb!!
     
  2. Outstanding recipe! As a variation, I tried using only one Oreo with double stuff and Nutella instead of peanut butter. I got great reviews from friends and family.
