Meatloaves
- 1 1⁄2 lbs ground turkey or 1 1/2 lbs ground chicken
- 1⁄3 cup water chestnut, chopped fine
- 3⁄4 cup fine breadcrumbs
- 2⁄3 cup evaporated milk
- 1⁄4 cup soya sauce
- 1⁄4 cup green onion
- 1 egg
- 2 teaspoons oxo low-sodium instant chicken bouillon granules
- 1 garlic clove, minced

Sauce
- 1⁄3 cup ketchup
- 1⁄3 cup honey
- 2 tablespoons soya sauce
- 1⁄2 teaspoon garlic
directions
- Meatloaves-Combine all ingredients in a large bowl.
- Mix lightly but throughly to blend.
- Divide into 12 muffin cups.
- Bake at 350 degrees for 30-35 minutes.
- (You can freeze the loaves at this point. Place into a large ziploc bag, label and freeze. To serve: heat in oven or microwave until warm, serve with sauce.).
- Or Remove from pan and serve with honey garlic sauce immediately.
- Sauce-Combine ingredients in a sauce pan.
- Cook and stir on low heat until hot and bubbly.
- Serve with rice or Oriental noodles.

I'm giving these a 5 for concept and ease. I have some suggestions for people trying this recipe though... We found these mini-loaves a lil' too salty. I reccommend using lite or low-sodium soya sauce in the meatloaves. I used milk instead of evaporated milk and it comes out fine. Beef substitutes well for the ground turkey/chicken. The crunch of the water chestnuts had to be explained to those at the table (otherwise they didn't know /WHAT/ the crunchy thing was that they were biting into.) The sauce for the loaves was lovely and has possibilities for use in other dishes.

I was looking thru Zaar for a quick and easy dinner to make with ground turkey and came upon this wonderful recipe. I didn't have water chestnuts or evaporated milk, so I eliminated them. I also used regular onion instead of green onions. These were filling and satisfying and will be making these again! Thank you for this great recipe!

My husband and I thought that this recipe was OK, but a little odd. Both the meatloaves themselves as well as the sauce were extremely salty, even though I used low-sodium soy sauce. We used ground chicken. I followed recipe directions exactly, and they were easy to make. Perhaps they might have worked better with ground turkey or maybe ground beef, and with less soy sauce. These looked so good, I'm sorry they didn't work for us. Thanks for sharing, though.

I've done this a few times now and it is our current fave way to have meatloaf. I have done it with ground beef as well as with ground chicken and/or turkey. The water chestnuts are a brilliant addition. I typically use minced yellow onion instead of the green onions, just because that is what I usually have on hand. I sometimes make the sauce, sometimes not. And I don't always make them mini, just do a big loaf and bake for 10 minutes longer. Very easy and tasty.

These were super yummy. I used a combination of lean turkey and beef, left out the water chestnuts, and used vidalia onion in place of green onions. I didn't add very much soy sauce since the mixture was getting pretty wet. The meat muffins were very moist and held together perfectly. I was worried the sauce would be too sweet even after I added some hot chili sauce but the sweetness was balanced by the savory meatloaf. Now I just wish I had made more of them! Hmmm... maybe that's what I'll do with the rest of my ground turkey! :) Thanks for another great recipe.

I made these as part of my OAMC Lunchbox plan. I knew that something with 26 five star ratings must be good, but darn are these GOOD! I used ground beef instead of chicken and they still turned out wonderfully. The low-sodium broth is important because the soy sauce is so salty. If you're looking to cut down on salt even more, use light (as opposed to dark) soy. Thanks for another fantastic recipe, Pamela. I'll definitely be making these again very soon!
