  • Cut all potatoes in to cubes, cut onion in to quarters. In a large mixing bowl mix potatoes and onion, pour in Olive oil and Mrs.Dash. Cover bowl and toss until all coated. Spray cast iron pan with non stick spray, then pour in potato mixture. Preheat oven to 375degrees F. Cook potatoes for about 1 hour or 1 hour 1/2 until tender. Turn potatoes once or twice.

I have lived on a small island in the Bay of Fundy all my life...Deer Island, New Brunswick... My husband and I have a 3 year old, boy. I am a Lobster Fisher woman, with my husband. Our fishing season is spring and fall. I have also been a Weight Watchers member for 3 year, I lost over 50lbs and staying there. Therefor I like to try lighter recipes. Someday I would like to be a professional chef, but living on an island that is 8 miles long and 4 miles wide it is very unlikely.
