- 2 bunch fresh broccoli or (10 ounce) packages frozen broccoli
- 2 tablespoons butter
- 2 tablespoons minced onions
- 1 1⁄2 cups sour cream
- 2 teaspoons sugar
- 1 teaspoon white vinegar
- 1⁄2 teaspoon poppy seed (optional)
- 1⁄2 teaspoon paprika
- 1⁄4 teaspoon salt
- 1⁄3 cup chopped cashews
directions
- Cook fresh broccoli until crisp-tender and drain.
- If using frozen broccoli, cook according to package directions and drain.
- Set aside.
- In a small pan, melt butter; saute onion.
- Remove from heat and stir in sour cream, sugar, vinegar, poppy seed, paprika and salt.
- Arrange broccoli on a platter or shallow dish and pour sour cream sauce over it.
- Sprinkle cashews over sauce.

VARIATION:
- Place cooked broccoli in a 1 1/2 quart casserole.
- Pour sauce over top, sprinkle with cashews and bake in a preheated 350ºF oven for 15-20 minutes.
