Passover Cajun Spiced Chicken
"Love Cajun seasoning and also wanted to create some new Passover dinners. Tried this last year and thought it was rather good if I may say so myself."

ingredients
- 4 skinless chicken breasts
- 1⁄2 cup matzo meal
- 1 tablespoon cajun seasoning (self made)
directions
- Preheat the oven to 350°F.
- Lightly grease a shallow pan.
- Mix matzoh meal with seasoning.
- Coat chicken with the mix.
- Place in the pan on middle rack of oven.
- Bake for 35 minutes.
