Pasta E Fagioli

"This is my son's favorite soup. He thinks it tastes just like Olive Gardens. Never any leftovers with this soup. I hope you enjoy it as much as my family does."

  • Brown the hamburger, drain off the fat.
  • Add onion, carrot, celery and garlic and sauté until onion is clear (approx 10 minutes).
  • Add everything else except pasta, and simmer on low for one hour.
  • I add the pasta and simmer for 5-10 minutes, however, if you are not going to eat this right away, keep the pasta seperate so the pasta does not soak up all the sauce.
  • Enjoy.

  1. Loved this!!!!! I did add 2 cups of beef broth, when I added all of the other ingredients. I also made the pasta seperately and let my guests "add their own".
     
  2. Delicious... everyone liked it (usually my 5 year old doesn't like anything). We will definitely make this again... my DH and I had to have seconds. I left it sitting an hour after making it while my kids had swimming lessons... so all the liquid was soaked up in the pasta (I used Orzo bc I didn't have the other). I just added 2 cups of water so it had a soupy texture. So flavorful! Thanks.
     
  3. I have never tasted Olive Gardens Fagioli soup. So whether it is or isnt OG recipe, I couldnt say .But I can say this soup tasted really good! It is full of flavor and very satisfying. It was easy and quick to prepare, and I will be making it again. Delicious!
     
  4. I love this recipe! I have made it several times and can't get enough of it. Other than adding two cups of beef broth and keeping the noodles separate so everyone can add their own (thanks reviewers!), I followed the recipe exactly. Thanks for a wonderful -- and easy! -- meal.

Tweaks

  1. Excellent!!! Made this for dinner tonight and couldn't believe how easy & delicious it was. I tweeked it a bit based on other reviewer's advice: Used 1 can of beef broth instead of the tomato sauce, drained the beans (but did not rinse), skipped the vinegar, used Italian Herb blend, and a little crushed red pepper and cayenne for seasonings. (Cut back on the salt if using the broth) and finally, cooked & stored the pasta separate to help the soup keep it's consistency the same as the original O.G. version. YUMMMMMMM!!!
     
  2. I've been making this recipe for years, found it on a copy cat web site. We don't eat beef, so I substitute turkey sweet Italian sasuage for the ground beef. Remove the sasuage from the casings and continue with the rest of the recipe. SOUP-er yummy!!
