Directions

  1. Cook pasta until al dente.
  2. Combine avocado, garlic, lemon juice and cilantro in a food processor.
  3. Process about 1 minute or until smooth.
  4. Stir in chopped tomatoes.
  5. Drain pasta and pour pesto over it tossing well.
  6. Sprinkle with Parmesan cheese.
