  1. Set a small pan of water to boil.
  2. Drop the zucchini slices into the water for 30 seconds.
  3. Remove immediately and drain.
  4. Melt the butter in a large pot and saute the onion until it is transparent.
  5. Add the apples and stir well.
  6. Add the tomatoes and the blanched zucchini.
  7. Stir well, then add the parsley.
  8. Season the mixture with salt and pepper and cook, covered, over a gentle heat for 5 to 10 minutes, until the zucchini is soft.
  9. Serve hot.
