Paula's Cream of Broccoli Soup

"This is my family's favorite soup ... even my kids enjoy it! I have made this for our church's soup suppers and I always come home with an empty crock pot!"

  • Melt butter in a medium saucepan and lightly sauté onion.
  • Add flour, bouillon cubes and seasonings, stirring until smooth.
  • Remove from heat.
  • Gradually whisk in milk.
  • Bring to a boil over medium heat.
  • Boil and stir 1 minute.
  • Meanwhile, cook broccoli according to package directions.
  • Add broccoli and simmer an additional 10 minutes.
  • At this point, you could put in a crock set on low until ready to serve.
  • NOTE: When I make this in the crock pot, I triple the cream soup base and add 2 packages of the broccoli florets.

  1. This was as delicious as it was easy! I steamed the broccoli, but it would be even better with roasted broccoli. I used four cans of evaporated milk. Next time I'll use evaporated skim milk. I cut the butter to 5 tablespoons. I think it could be cut further to 3 tablespoons with no loss of flavor. I used Tony Chachere's cajun seasoning instead of Lawry's. I WILL prepare this regularly. Yum!
     
  2. Delicious!! We just finished this for dinner tonight. I used Fresh Broccoli instead of frozen, since i had a lot. I just steamed it a few minutes. For the sauce, I did as directed, except I used Chicken "Better than Bouillon" base instead of the cubes. And I didn't have any seasoning salt, so I found a recipe for a substitute and whipped up a version of that. And then I added 2 slices of American Cheese. My mom always put cheese in her's, but I didn't want to use much. It added just enough flavor/texture to be perfect.<br/><br/>It was one of the best Cream of Broccoli Soups I've had (including restaurants), and by far, the best I've made at HOME. Definitely a keeper.
     
  3. Hey, hey, Paula..... This is, bar none, the best broccoli soup I have ever tasted, and I've made a LOT of broccoli soup both at home and in restaurants. I don't like the Velveeta and Cheddar Cheese versions, not because they don't taste good, but that is CHEESE soup with veggies to me -- yours is true broccoli soup and it was REALLY easy to make. 30 minutes and I was DONE. Did I tweak it? Of Course I did! (But NOT very dang much) You know how men are -- they can't leave well-enough alone. Anyway, I made it exactly as you said (microwaving the chopped broccoli in a covered casserole with a few Tbsp. of water to cook it -- 5 minutes on high) and, when the soup was done, after tasting, I decided to add an additional 1/2 tsp. of Lowry's (bringing the total to 1 tsp.) which really boosted the flavor. Health nuts should leave it as it is, though, because it's already awesome. I will experiment next time by using white pepper instead of black but honestly, I think you've pretty much got this soup down to a science. My wife and daughter went for this soup like a cat on creme -- Great job, Paula, and thanks ever so much for posting. This is the best recipe I've ever gotten off Recipe*Zaar!
     
  4. This soup was very tasty! It was easy to make and me and my husband loved eating it. I added 5 instead of 6 spoons of butter to make it a little healthier and I used 1% milk and it still tasted amazing! I really like there is no cheese in this soup. I thought I would need to add some but it truly didn't need it! Thanks for sharing this keeper!
     
  5. This was really good! I added 1 teaspoon of ground dill seed and 1 tablespoon of lemon juice in a double batch.
