- 2 links of your favorite type sausage
- 1⁄2 small green bell pepper
- 1⁄2 small white onion
- 4 garlic cloves
- 3 tablespoons olive oil
- 2 tablespoons flour
- 1 teaspoon cayenne powder
- 1 teaspoon paprika
- 1 pinch allspice
- 1 tablespoon salt
- 1 cup rice
- 1 (6 ounce) can tomato paste
- 3 cups water
directions
- Cut sausage into .25 inch slices and fry until cooked. Then remove.
- Add olive oil and heat, then add bell pepper, onion, and garlic.
- Add flour, cayenne, paprika, allspice, and salt.
- Let cook for 30 seconds to 1 minute.
- Add rice and cook for 30 seconds to one minute.
- Add tomato paste and 2 cups of water.
- Let this cook down and then check the rice. If it is too hard still, add the rest of the water. I recommend stirring this frequently as the tomato and rice will form a solid mixture that will keep the water out of the rice, keeping it hard.
