Pea Patties

"Adapted from a friend, hers was a little bit heavy so I've made lighter version. If you like, you can add canned corn. But do not forget to drain well :) Enjoy!"

  • In a medium sized pot, boil peas for 2 minutes and drain. Set aside.
  • In a large bowl, mix the yoghurt, milk, egg with spoon until smooth.
  • Stir in chopped garlic, black pepper, salt, red pepper flakes, and mint.
  • Add peas and stir.
  • Gradually add cornmeal, stir constantly so that the mixture does not get lumpy.
  • Heat 1 tablespoon of olive oil in a pan.
  • Drop tablespoonful of batter into the pan.
  • Flatten patty slightly with the back of a spoon.
  • Cook for about 3-4 minutes on each side.
  • Remove to a platter covered with paper toweling.
  • Continue until the batter ends.
