Peanut Butter and Banana French Toast

  • In a medium bowl, beat eggs, milk, and vanilla until blended.
  • Set aside.
  • Make 4 peanut butter and banana sandwiches.
  • Soak sandwiches in egg mixture until all or most of the egg mixture has been absorbed.
  • Melt butter in skillet over medium heat and fry sandwiches until both sides are golden brown and crisp, turning over halfway through, about 6-8 minutes.
  • Cut french toast into diagonals and sprinkle with icing sugar when serving.
  • If desired, drizzle with honey or maple syrup.

  1. This is good, and the only thing I would do different, is like someone else said, mash and spread the banana. Pretty delicious though!
     
  2. Pretty good! I found it was better to just dip the sandwiches quickly than let them soak even for a couple seconds because they got way too soggy.
     
  3. I really liked this, but I did not use the honey, fruit or maple syrup as others did.<br/>I think I would have enjoyed it so much more .... but I was trying to be good for my diabetic DH. Ummm it didn't work, I snuck in to the pantry and topped what I had left with maple syrup....................... Although he enjoyed his, but only just, but the reaminder of mine ended up ... Sooo Yummy.<br/>So the moral of this recipe, is DON'T FORGET the honey or maple syrup!
     
  4. This is really good. The only things I would change is to mash the bananas and spread them evenly into the sandwiches to get an even taste and also drizzle the inside of the sandwiches with the honey. Thanks for a different way to prepare French toast, which my son who isn't feeling well requested for dinner tonight. Made for the Cajun/Creole cookbook for team Tasty Testers during ZWT9.
     
  5. What a good idea - turning a sandwch into french toast! I can imagine switching out the fillings with all sorts of things too! Even my egg hating bf liked this one.

I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
