-
40 bars
ingredients
- 1 cup butter
- 1 cup sugar
- 1 cup brown sugar
- 2⁄3 cup peanut butter (I use creamy)
- 2 eggs
- 1 teaspoon vanilla
- 2 cups flour
- 2 cups oats (old fashioned or quick cooking)
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
-
Frosting
- 3 cups powdered sugar
- 4 tablespoons cocoa
- 4 tablespoons soft butter
- 2 -3 tablespoons milk
- 1 teaspoon vanilla
directions
- Cream butter and sugars.
- Mix in peanut butter, eggs and vanilla.
- In a separate bowl combine flour, oats, baking soda and salt.
- Combine two mixtures together.
- Press evenly into a 15x10x2 cookie sheet (jelly roll pan).
- Bake at 350°F for 15-18 minutes (till golden brown).
- Mix the frosting ingredients together.
- Spread the frosting over the warm bars.
- Occasionally the frosting will be a little hard to spread. When this happens, I add either milk, or I microwave the frosting for 10-20 seconds and it is a lot easier to work with.

Thanks for a great recipe! I love that they are made with stuff I usually have on hand. The bars are soft and not too sweet. I was afraid there would be enough of the frosting when I started spreading it, but a thin layer is plenty, as it is pretty sweet. Even my non-chocolate liking DD enjoyed these.
