  • Divide tapioca into 4 tall glasses.
  • Combine all remaining ingredients in a cocktail shaker and shake well until mixture is nice and frothy.
  • Pour into glasses, stir well to separate tapioca pearls and serve with a thick straw.

  1. I halved this recipe for mom and myself and both of us loved it! Mom especially liked that it was light yet satisfying, and mildly sweet. For cooking the tapioca, I soaked it in enough water to cover it for 1/2 hour, then added an additional 1/2 cup water and cooked in the microwave at 80% power for 8 minutes. I don't have a cocktail shaker, so I used a bottle. It's fun watching the tapioca pearls separate when you add the tea mixture! Thanks tealeaf!
     
  2. Actually, Asians call this Bubble Tea with pearls, and are available in many flavours such as mango, strawberry, taro etc. The "pearls" they use are blackish. On the west coast of Canada where we have a large Asian population, there are many Bubble Tea cafes.
     
  3. I came to post this recipe and glad to see it is already here! I like to use peach tea but also recommended are black tea, orange pekoe, or lychee. I crave these!
     
  4. Well, I've never cooked tapioca balls before so Anu's tip on cooking the tapioca was much appreciated. There was no guidance on what sort of tea is best and I used Earl Grey as it was either this or a herbal tea. Cassava root can get a tad slimey so I was prepared for that side of things. Basically this is a cup of sweet milky tea with some tapioca balls in it. Nice but I wonder why someone dreamt it up!
