  • Cook orzo according to package directions; drain and set aside.
  • Saute onion in oil in a saucepan over med-high heat until softened, about 5 minutes.
  • Add garlic; cook 1 minute.
  • Stir in wine, cream, broth, peas, and ham; simmer over med-low heat until peas are tender, 4-5 minutes.
  • Stir in cooked orzo.
  • Off heat, stir in egg yolk and Parmesan until thoroughly combined (yolk will cook from residual heat without the risk of curdling).
  • Season with salt and pepper.
  • Per cup: 416 calories, 24 g total fat (11 g sat), 3 g fiber, 30 g carb.

  1. I truly loved this recipe. All I did different was add red pepper flakes and change the orzo to Linguine..Thanks for sharing this recipe ratherbeswimmin'...
     
  2. The ratings in my family were mixed on this one. I thought it was a bit soupy, so I think cooking the pasta in part chicken stock, and leaving it out later would fix this. It was a little bland, I thought.
