- 4 ounces fresh basil
- 1⁄3 cup shredded parmesan cheese
- 1⁄4 cup pine nuts
- 1 garlic clove
- 1⁄2 teaspoon kosher salt
- 1 dash pepper
- 1 dash nutmeg (optional)
- 1⁄2 cup extra virgin olive oil
directions
- Tear Basil leaves off stems, rinse, dry and set aside.
- toast pine nuts in a frying pan over medium heat, moving constantly to keep from burning. Toast them until they become fragrant and slightly browned.
- Put pine nuts in a food processor. Add Parmesan and garlic clove. Blend until all ingredients are combined.
- Add Salt, pepper and nutmeg (optional).
- With machine turned back on, slowly add Basil.
- Turn off food processor and stir mixture, blend for a few more seconds.
- With the machine turned on again, slowly drizzle in Olive Oil.
