“It's so easy to create quick and tasty dishes with chicken. I created this one night when I had peppers that needed to be used up. I needed something quick, and to please the family there had to be some heat. We use medium or hot picante sauce, but you could use mild.”

Directions

  1. Pound the chicken breast halves with a meat mallet until uniformly about 1/4" thick.
  2. Sprinkle them with a generous coating of seasoned salt on one side.
  3. Melt butter in a skillet and saute the chicken breast halves until golden brown, about 3- 5 minutes per side.
  4. Slice onion into 1/4" thick slices and quarter the slices.
  5. Cut all peppers into strips about 1/4" wide.
  6. Add onion, garlic and peppers to the sauteed chicken breasts and saute for a few minutes.
  7. Add the picante sauce over the top of the chicken and vegetables.
  8. Cover and simmer for about 5- 10 minutes, until vegetables are tender.
  9. Serve over hot cooked rice.
