Pickled Herring
"A Scandinavian delight, and one my family loves :) It's a tradition to eat it at midnight on New Year's Eve for good luck in the coming year too! **(time does not include chill times)"

ingredients
- 1⁄4 cup salt
- 1 1⁄2 lbs fresh herring fillets, boned
- 1⁄2 cup white vinegar
- 1⁄2 cup sugar
- 1 tablespoon allspice berry
- 1 tablespoon white peppercorns
- 2 bay leaves
- 1 red onion, thinly sliced
directions
- Dissolve 3 tablespoons of the salt in 3 cups of cold water.
- Put the herring in the salt water, cover and refrigerate for 12 hours.
- Put the remaining salt, the vinegar, sugar, allspice berries, peppercorns, and bay leaves in a small saucepan with 1 cup of water.
- Stir this mixture over med/high heat until the sugar dissolves, then remove from the heat and cool.
- Remove the herring from the salt water and put in a shallow baking dish.
- Put the onions on top of the fish, then pour in the pickling mixture.
- Cover and refrigerate overnight.
- Serve right from the dish, yum!

Perfect for my DH! He loved this and thought he was in heaven! Loved the use of allspice berry here too. Started this project 2 days ago, and what a lovely day to eat a pickled herring. The sugar was taken down to 1/4 cup to adjust for sweetness. Made for ZWT 6 -
ZWT6: Another recipe I made just for my German hubby - right up his alley!! He loved it - I served it on homemade caraway-rye bread -
I think I'd prefer it with less sugar,but other than that I can't complain of anything. I'm just happy that I was able to make pickled herring at home. This was a first for me. The hardest part of this is the waiting period. Thanks for sharing. Made for Zwt 6.
