  • 1 (10 ounce) bag corn chips (NOT snack size)
  • 2 (15 ounce) cans beef tamales
  • 2 (15 ounce) cans chili (without Beans)
  • 13 cup water
  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese

directions

  • Crush corn chips. Sprinkle 1/2 package over the bottom of a 9x11-inch baking dish.
  • Unwrap tamales and arrange over top of crushed chips.
  • Combine 2 cans of chili and water.
  • Pour over tamales.
  • Sprinkle onions over chili.
  • Sprinkle cheese over onions.
  • Top with remaining crushed corn chips.
  • Bake in moderate oven (350°) 35 to 40 minutes.

  1. With minimal effort and tasty results, this dish was a winner for us. I used frozen tamales (that I had micro-defrosted) and added a few chopped jalapenos with the onions. It was the perfect slightly spicy comfort food. Leftovers re-heated easily, too. I don't usually have tamales on hand, but may have to add those to my pantry items for this quick supper. I think that it would be great with leftover chili, too.
     
  2. This was yummy. Everyone liked it. Mom and Dad, of course, loved the onions in it, but ds asked if next time I'd leave the off one end of the dish for him. He'd prefer it without them. He still ate it though.
     
  3. Super easy, great-tasting comfort food! Add a little bite by using spicy chili or tamales, but beware of using only "hot and spicy" ingredients or you'll end up with a ver-r-ry hot dish. Everyone will think you spent hours on this when you just raided the pantry. Thanks for the recipe!
     
  4. I substituted "almost no fat" turkey chili for the chili, but otherwise stuck to the recipe. This was really good and it smelled great cooking, too. As my husband said, "this is a keeper".
     
  5. This baby was gone fast! I made this for hubby's friends over for the Canuck's game; they LOVED it! I have never made anything like this; it didn't look like anything before going into the oven, but the product was a YUM YUM treat! Thx for the marvelous recipe ~Izzy

I love to cook,in fact you could call it my favorite hobby My pet peeve is telemarketers,Every time I get busy with my recipe hobby one of them will call and knock me off the web,and of coarse I waste precious time getting back on.I am disabled,so I no longer work,and have plenty of time to pursue my hobby. My best dish I make is Lasagna but thats just because I love lasagna.I am also asked to bring No-Bake cookies at all of our potlucks, and linger-longers at church.Meat loaf is another often requested dish I am asked to bring...... NOT MY meatloaf but .... My husbands. He is as good a cook as I am,He can cook anything I can cook, and I can cook anything he can cook,but some things I make better,and some He makes better...So we do a lot of compromising at our house.
