- 1⁄2 - 1 lb beef, strips
- 1⁄2 cup pineapple tidbits
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons garlic, minced
- 2 tablespoons ginger, minced
- 2 teaspoons dry mustard
- 3⁄4 teaspoon pepper
- 1⁄2 cup mushroom, sliced
- 1⁄4 cup tomatoes, diced
- 3 green onions, sliced
- 2 teaspoons cornstarch
- additinal salt and pepper
directions
- Salt and pepper beef strips and cook in pan coated with cooking spray on medium-high heat. Remove from pan. *skip this step if using leftover cooked meat.
- Add mushrooms and onions to pan and cook stirring occasionally until softened (5-6 minutes). Add garlic and cook an additional 30 seconds.
- Add remaining ingredients and stir together until heated through. Allow the cornstarch to thicken the liquid to make a sauce. *Add additional soy sauce if desired.
- Serve with rice.
