Pineapple-Pecan Cookie Tarts

ingredients
- 1⁄2 cup softened butter
- 1 (3 ounce) package softened cream cheese
- 2 tablespoons sugar
- 1 1⁄2 cups flour
- 3⁄4 cup finly chopped pecans, divided

Filling
- 2 eggs
- 1 cup packed brown sugar
- 3⁄4 cup crushed pineapple, drained
- 2 tablespoons melted butter
directions
- In small mixer bowl, mix butter, cream cheese, and sugar; mix on low until well blended.
- Add flour; mix thoroughly.
- Form into a ball.
- Cover and chill for 30 minutes.
- Press chilled dough onto bottoms and sides of 12 muffin cups.
- Sprinkle 1/2 cup of the pecans on bottom of cups.
- In small bowl, combine filling ingredients.
- Stir until well blended.
- Spoon filling over pecans.
- Sprinkle remaining pecans on top.
- Bake at 350* for 35 minutes, cool in pan 15 minutes.
- Remove from pan, cool completely.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
