  • Combine all Ingredients in large bowl.
  • Mix well with fork.
  • Drop by teaspoons onto greased baking sheets.
  • Bake at 350F degrees for 10 minutes.

  1. Delish! I made these amongst several other Christmas cookies and these were a hit! I added some green food coloring to make them more green but other than that they were so simple and quick to make!
     
  2. These cookies were incredible, I left out the nuts, and added semi sweet chocolate chunks... very moist, and flavorful, the pistachio flavor defintely outshines the coconut, but still a great combination... highly recommended.
     
  3. Fabulous!! The only difference to this recipe was I added vanilla pudding instead of pistachio (didn't know if the cookies would be green - maybe St Patricks day! :o)) These were incredibly moist and chewy - my family loved them!! Even for myself, who doesn't care that much for sweets took 2 cookies a day to work as a dessert for my lunch until they were gone. Keep bringing it on Mizz Nezz!
     
  4. I think I see why pictures were not posted before on these. They are not very pretty. I used chopped pistachios instead of walnuts as I needed to use them up. They were ok on flavor so I decided before making the rest of the cookies to try them with chocolate chips as another reviewer stated. That helped the flavor some. Still, they were not appetizing to look at. I had leftover pistachios so I ground about a cup into coarse meal and rolled about quarter sized rounds of the leftover dough (they rolled very easily with all the oil in them) and slightly flattened them onto the cookie sheet. These came out with the best flavor and they looked good too. I will see if I can post a pic of all the cookies so you can see the difference.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
