  • Use as many chicken breasts as you need for dinner.
  • Preheat oven at 350F or 180°C Remove skin & bone, cut into 2 parts and place in baking dish.
  • Sprinkle with lemon juice and dot with butter.
  • Salt to taste.
  • Cover closely and bake about 15 minutes.
  • Do not overcook; pierce with fork to be sure thickest part is done. If your chicken is cold, then the outside may cook slightly faster than the inside.
  • Use pan juices as a sauce.

  1. Great, easy and flavorful way to prep chicken breasts. I didn't have a cover so I had to improvise with a pie tin and was surprised by how moist they were and the nice sauce they created. I used boneless skinless packed breasts and did cook them at 375 for 40 minutes to get them to 175/180.
     
  2. Easy peasy way to get wonderfully moist and delicious chicken. I did need to cook for close to a half hour to bring to 175 degrees. I used a mixture of garlic and herbs instead of salt but did add a bit of salt when it was done. I used the chicken for panini's and it worked great. The leftover chicken will make a great chicken salad sandwich. Thanks for sharing this wonderful way to poach chicken.
     
  3. Very easy way to make moist chicken breasts. I replaced butter with olive oil and salt with poultry seasoning and garlic powder, to make it a little more heart healthy. I guess my chickens were still defrosting, so it took more like 45 minutes to cook through. Thanks for the idea.
     
  4. I have made this twice now, and we love it. It is so great to make several at one time and have these ready when a recipe calls for cooked chicken. One note: I do use a meat themometer to let me know when the internal temperature is getting near 170. I take them out at that point and let them rest to 180. Perfect everytime. Thanks for a great and easy way to poach chicken.

Hey Everyone! Greetings from Sunny Singapore! I'm am so glad to have found this site. It is waaaayyy better than other sites I've been. I have about 240 cookbooks and my faves are the older cookbooks I got from my mom as I prefer from scratch cooking. I have created several cookbooks dedicated to the use of eggs. I have come across a number of recipes requests for using up lots of eggs. I won first prize with that orange costume! The one with the (fake) Tattoos was taken in Dec 2007 when I again won first prize. I love spicy food and the many different kinds of chilli dips different foods calls for!! Love baking, cross stitching, trying my hand now in shoe beading and patchwork and now doing a course on aromatherapy. Oh and am now trying to raise a flower and herb garden but it is not easy as I am a newbie at that too! In some of my recipes, you will note that there is a letter in brackets at the beginning of the name. This is what it means : (A) : Aromatherapy/Homeopathic/Less toxic I'm not crazy about recipes using pre-mix cakes as I am a more from-scratch person. My recipes will have the local name (when applicable) as well as the anglicised name, eg "Au Nee (Sweet Yam Paste). If I had a month off, I'd be in Texas.
