  • In a saucepan melt butter over low heat, stir in flour, salt and pepper.
  • Add chicken broth; cook and stir constantly until the mixture comes to a boil.
  • Cook for one minute then remove from heat and set aside.
  • Season pork chops with additional salt and pepper as desired.
  • Brown pork chops in a skillet coated with vegetable oil.
  • Grease a 9 X 13 baking pan.
  • Layer potato and onion slices in pan.
  • pour broth mixture over the potatoes and onion.
  • Place browned pork chops on top of potatoes.
  • Sprinkle paprika and parsley.
  • Cover with aluminium foil and bake at 350 for 1 hour or until potatoes are tender.
  • Remove foil and bake an additional 30 minutes, or until potatoes are tender.

  1. We really enjoyed this casserole dish. I used boneless pork loin chops and instead of canned chicken broth I used a chicken cube mixed with water. Thanks for a great recipe
     
  2. Great Recipe. I used a can of cream of chicken soup with half cup of milk. I also added butter 4 tablespoons and shredded cheddar cheese 1/2 cup to the bottom of the baking dish before anything else. Then I layered the potatoes and added sliced canadian bacon to the top.
     
  3. I just realized I've made this numerous times but have never rated it.. this is my favorite way to make pork chops & scalloped potatoes.. no changes.. perfect as is!
     
  4. Very tasty meal but bland. To spruce it up I grilled the onions and added a light flour coating to the chops when searing. Also be sure to use unsalted butter as the chicken broth has salt in it too.
     
  5. I made this last night, the house still smells great! Very good comfort food. Leftovers today were even better.

  1. This is a very tasty meal. My family can't get enough of it. The only thing i add to this is that steam round green peas as a side dish and it really goes with it. Give it a try.

  3. We really enjoyed this, the pork was nice and tender and the scalloped potatoes and onions were perfect. I really like the use of gravy with the scalloped potatoes instead of milk. This is definitely a comfort food sort of meal and one I know I'll be making again. Thanks for posting.
