Portabella Mushroom Burgers

  • Cut stems off of mushrooms and place smooth side up in a shallow dish.
  • Sprinkle lightly with salt and pepper.
  • Prepare the marinade by whisking together the vinegar, oil, basil, oregano, and garlic.
  • Pour the marinade over the mushrooms and allow to stand at room temperature for 10 to 15 minutes, turning once or twice.
  • Preheat grill to medium-high heat.
  • Place the mushrooms on the preheated grill, reserving the marinade for basting
  • Grill mushrooms for 5 to 8 minutes per side, basting frequently with marinade.
  • During the last 2 minutes of grilling, top with cheese.
  • Serve with the whole wheat rolls and condiments of your choice.

  1. This made a nice tasty lunch! I scaled this down for 1 person.I served this with grilled onions, mustard, and mayo on whole grain bread. I cooked the mushrooms in the frying pan so I could cook the onions with them. Loved the marinade. Thanks Paula!
     
  2. Rachael Ray suggest that before using portobellos, turn them upside down, snap off the stems, and scrape the dark gills from the underside, using a teaspoon. This prevents the unappetizing brown liquid that oozes from the cooked mushroom.
     
  3. This was very good! I cooked these in a grill pan on the stove, since it's the middle of winter right now, but they turned out very well and got to cook in the juices. This is a lunchtime keeper! Thanks.

  5. These burgers are a vegetarian delight!! I made 4 burgers with 4 bun sized mushrooms and had plenty of marinade. I didn't grill them, but instead pan fried them. As a result they were a little more juicy and somewhat difficult to eat, but that was my own fault and did not take away from the wonderful flavour. Next time I will definitely try grilling them. These burgers are a quick and delicious star of a lunch or dinner. Thanks PaulaG!!

I came to this site in March of 2004. It was then called Recipezaar. This site was the first on-line site that I ever joined. I first popped in 2003 while searching for a Peach Cobbler Recipe. In March of 2004, DH was having shoulder surgery and I was looking for a Split Pea Soup. Once again I found myself on Zaar as it came to be called. Over the years I hung out and learned from some of the best home cooks in the country, I posted over 700 recipes on the site, reviewed over 3500 recipes and posted over 3000 food photos. Over the next 10 years the site made many changes and in 2010 it was sold to to Food Network and became Food.com. Until last year we played games, talked and shared with one another. As a result of the community and the relationships I built I got to meet some wonderful people from all over the country. I also have a great number of friends that I have never meet face to face. Some of us still hang out at various places across the net. Zaar was more than a cooking community. It was an internet community of friendship. Life is an adventure ever changing.
