Potato and Broccoli Medallions

"If you had these little medallions at IKEA you probably loved them. Well I tried to come up with the ingriedients that will replicate the recipe. I hope I came close. ;)"

  • Preheat oven to 375 degrees F.
  • Spray 16 muffin tins with vegetable spray.
  • Mix together potatoes, cheese, broccoli, and onions into each muffin cup. Season with salt and pepper and top each cup with 2 tablespoons of heavy cream.
  • Cover with foil and bake for 30 to 40 minutes, removing the foil halfway through cooking time.

  1. I recommend cooking the potatoes first them small dicing them..and I added a beaten egg to the cream to help them set firmly. This is very close to the Ikea medallions (to be specific they are timbales) though I might change the cheese. Grated Asiago or Parmesan perhaps?
     
  2. Very simple and easy recipe. However I used frozen beans finely diced. I also added 2eggs into the mixTure. Half a cup of thickening cream was added to the mix. Before placing into the tins, I placed all the veggie ingredients (without egg and cream) into the steamer, and added salt and pepper to this. I steamed everything for about 15mintues. Then placed mixture with added cream and eggs into muffin tins. I then added some grated cheese on top. Placed into the oven. My oven has a tendency to cook things very quickly so after about 20mins everything was all golden brown. I took them out to try and they were cooked. So I pulled them out of the oven and let them cool down in the pan, to help retain their shape. Thankyou for this wonderful recipe.
     
  3. Ikea uses cauliflower, but broccoli works great as well. At least now we know they both taste great!
     
  4. I will try this soon. This is what Ikea has on their website for them: A ready-made, potato-based dish with broccoli, leek, onions and cheese. Serve as a side dish with chicken, meat or fish, or as they are as a vegetarian dish. No cauliflower is in this. I ate them at IKEA today
