“Ready, Set, Cook! Special Edition Contest Entry: This is a great dish if you like spicy food and shrimp. Cooking with simply potatoes helps skips steps and makes this recipe fast and easy to make. It can be served with anything for a side dish. I ate mine with artichokes and bread.”

Ingredients Nutrition

  • 14 cup green onion, thinly chopped
  • 14 cup sun-dried tomato, chopped
  • 2 tablespoons of chopped basil
  • 34 cup sweet corn
  • 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
  • 12 lb raw shrimp
  • 2 tablespoons chipotle paste
  • seasoned pepper (as desired)
  • 12 tablespoon butter
  • 14 cup tomato and basil goat cheese


  1. Start cooking Simply Potatoes, diced with onion in a large skillet.
  2. Meanwhile prepare and mix green onions, sun dried tomatoes, and basil together in bowl.
  3. When potatoes are half way done cooking, start cooking shrimp in smaller pan with butter.
  4. When shrimp is pink, add chipotle sauce.
  5. Once potatoes are done add all the veggies.
  6. Add shrimp and goat cheese.
  7. Add salt and pepper as desired.
