- 3 medium potatoes, peeled and quartered (about 1 lb.)
- 1 small onion, finely chopped
- 1 cup water
- 1 teaspoon salt
- 3 cups milk
- 3 tablespoons butter or 3 tablespoons margarine, melted
- 2 tablespoons all-purpose flour
- 2 tablespoons minced fresh parsley
- 1⁄8 teaspoon white pepper
- 2 cups shredded swiss cheese
directions
- In a saucepan, bring potatoes, onion, water, and salt to a boil.
- Reduce heat; cover and simmer until potatoes are tender.
- Do not drain; mash slightly.
- Stir in milk.
- In a small bowl, blend butter, flour, parsley, and pepper; stir into potato mixture.
- Cook and stir over medium heat until thickened and bubbly.
- Remove from heat; add cheese and stir until melted.

I wanted to try a new soup so I picked this one even though I'm not crazy about swiss cheese and my kids are not familiar with it. However, after noticing that the kids were picking at the shredded cheese, I was pleasantly surprised when they just devoured the soup. It's easy and filling, a simple soup to make especially if you like swiss cheese.

This soup is absolutely delicious! I make a soup similar to this, not using swiss cheese, however. This is VERY filling. We only had 1/2 a serving each to cut down on the cals...and served this with Dee514's italian bread. Thanks for the recipe, Di. I know I can always count on you for a good meal ;)
