Potatoes and Sausage

"This is something my dad always made over the years. Definately a family favorite! The recipe is not exact. You can add or subtract as you like, this is definately hard to mess up! I like to make way too much so we can have leftovers in the morning with fried eggs, or scramble some eggs right in! Yum!!"

  • Peel and cut potatoes into 1 inch cubes. (Potato amount is approximate- I just keep chopping and slicing until I nearly fill a large pan!) Dice the onion.
  • Melt the butter over medium-high heat. Add potatoes and onions. Cover, and flip/stir occasionally.
  • Slice the sausages in half length wise, then cut into bite sized pieces. Add the sausage to the potatoes. Cook until potatoes and onions are cooked through and tender.
  • Note: Be careful not to flip too frequently so you get some crispy fried pieces of potato and sausage!
  • Season to taste with salt and pepper.
  • Top with cheese if desired. Serve and enjoy!
