Potluck Cauliflower and Lettuce Salad

"There are many combinations for Cauliflower Salads, this particular version is the favorite in our area. A delicious make ahead, perfect for potlucks and family gatherings. Great salad to add to the holiday table. For those special occasions I serve this in a cut glass bowl ... making it look as good as it tastes. I have been known to add slivered almonds to make for extra crunch! This salad requires at least eight hours mellowing time ... best made the night before ... that is a big plus when you are cooking for a crowd!"

  • In a small bowl: mix the mayonnaise, grated Parmesan cheese and sugar to make the dressing and set aside.
  • In large bowl: break cauliflower into florets, tear lettuce into bite size pieces, red onion thinly sliced, add the bacon bits.
  • Pour dressing over the salad, cover and refrigerate.
  • Toss before serving.

  1. Recently made this for a potluck and the bowl was empty when we left! Great recipe, only changes made is that I threw in some cherry tomatoes and almonds for some crunch.

I’ve been making this recipe for a few years now..One of my dearest friends introduced me to this recipe and I’ve been loving it ever since..I make it without the Parmesan cheese..just my preference..We call it snow salad and we make it every single Christmas Eve for our friends and family at our Christmas Eve gathering and it’s ALWAYS a huge hit..I also make it in a large clear deep dish and I layer the ingredients...First I add the lettuce,then the crumbled bacon which I fry myself, then I add the red onion and cauliflower, then I get the squeezable bottle of Hellmans mayonnaise and I add it to the top of the ingredients,then I. Sprinkle the white sugar on top of the mayo...then I keep layering the ingredients til the very top of the deep clear dish making sure to finish with the layer of mayo and sugar so it looks like Snow ;) hence the name Snow Sald...it looks so pretty all layered together in the dish with all the colors...Beautiful,delicious recipe that NEVER gets old..I look forward to making it this Christmas ??...Thanks for allowing me to share my long comment lol

  4. I've always loved this salad and the many versions people have of it. I have a similar recipe posted that uses cheddar cheese. but I must say I really liked the parmesan cheese in this version. I used real bacon, cooked and crumbled. It is a very pretty salad and perfect for picnics. Thanx for sharing!
     
  5. I cut this way down to make just two servings for lunch today and it stilled worked fantastic and I loved the taste. My grandmother does a hot cauliflower dish that I have always loved with combines mayo, sugar, bacon and cauliflower. This is sort of the cold version of that in salad form and so I had to love it. I used fat free Hellman's mayo and splenda and it worked fantastically. Made for ZWT4.

  1. This was fantastic!! I used scallions in place of the red onions and I allowed the cauliflower to stay in the dressing for a few hours and added the lettuce and bacon bits right before serving and tossed. This simple dressing is so great that I can't wait to try it on something else. Thank you so much!!!

Homemade of course! <br /> <br />I love preparing meals for my family and friends and in the sharing of good recipes be they mine or that of another. My posted recipes are recipes that are family favorites. My reviews here on Zaar allow that I have been most fortunate in the choosing of the recipes I have made. Without doubt we all love those over the top desserts and dishes to serve on special occasions and for those fives are a given. For me equally important are the recipes used in the daily meal preparation. Recipes enjoyed by my family be it a simple soup, salad or casserole are right up there with the 'over the tops' and share equal billing. Yes five star ratings ... if my family enjoyed, I would serve to invited guests, take to a pot luck, coffee hour or bake sale. <br /></p> <p>Aside from cooking and baking I admit that my interest in gardening exceeds that of the norm. I collect cookbooks, my favorites being the community and church cookbooks that have everyone sharing their favorite recipes.
