  1. We had a birthday celebration along with a cabin warming party at our new cabin last weekend. This was one of the dishes I served and did everyone love it! I don’t use fat free ingredients, so I used Annie’s Roasted Red Pepper dressing. I also doubled the dressing. Just YUMMY! Thanks for sharing.

  2. This is very good and so colorful too! I did scale way back on the red pepper and onion tho as it seemed like way too much for our tastes. I used maybe a quarter of a small red onion and just a quarter of the red bell pepper and used only about 1/3 of a cup of the parmesan. A flavorful salad indeed, thanks for sharing! Still in West Virginia but we've moved a few miles away, down to the county capitol. It's a compromise: bigger than our last town but smalelr than the "big city" of Cumberland MD, right up the road. Jobs are not that plentiful here so I am fortunate to be able to work at home (I'm a writer). My passion is cooking and feeding people family well....my pet peeve is the family court systems in America......my love is for emergency medicine and the people that make survival in a crisis possible
