Puffed Cauliflower Cheese

  • Preheat oven to 400 degrees.
  • Wash cauliflower; remove stalk end.
  • Cut into quarters; remove hard stalk.
  • Divide into florets; cook in boiling salted water until tender; drain.
  • Heat butter in pan.
  • Add flour; stir over low heat 2 minutes.
  • Remove from heat.
  • Add milk gradually; stir until smooth.
  • Return to heat; stir until boiling.
  • Add salt, pepper and most of bread crumbs.
  • Stir in egg yolks, cheese and cauliflower; adjust seasonings to taste.
  • Beat egg whites until stiff; fold into mixture.
  • Put into greased ovenproof dish; sprinkle with remaining crumbs.
  • Bake in preheated 400 degree oven about 30 minutes, until well risen and brown.

  1. This is quite possibly the best cauliflower dish I've ever tasted! It did look beautiful when it came out of the oven! I got a little creative when I boiled the cauliflower. I added a minced garlic clove to the water. The texture was so creamy and custard like, it just about melted in my mouth! I never thought playing "tag" would be so rewarding!
     
  2. We were leery about this dish as it was the first time we'd tried a souffle. However, it turned out very well. The taste was wonderful, light yet creamy. The presentation was impressive too! This dish is good enough for a dinner party. We will make this again.

  4. Definitely a 5 star recipe! My FIL deemed it "restaurant quality" and my hubby, who was initially skeptical simply because it was cauliflower, ate three helpings and kept saying how good it was. Needless to say, we all gave it 5 stars! It was so pretty when it was done cooking we almost didn't want to dig into it, but boy are we glad we did! I'm considering trying different cheeses or maybe adding a little curry powder to it next time, not that it needs any improving upon. Thanks MG for a great recipe!
     
  5. This recipe was SO YUMMY! I had a medium-large head of cauliflower so I doubled everything else and it worked out perfectly. I didn't have any plain cheddar on hand so I used monterey jack/cheddar combo and some grated parmesan. The parmesan gave it a nice salty quality. Also added a touch of onion and garlic powder. Substituted panko breadcrumbs, since that's what I had around. It baked so perfectly. Nice and puffed and golden brown. Everyone LOVED it. This is definately a keeper. I will use this same recipe for other veggies like broccoli too. Thanks!
