Pumpkin and Ginger Soup

  • Heat butter and oil until foaming in a large, heavy-based saucepan.
  • Add ginger, vegetables, curry powder and spices.
  • Stir-fry for 2-5 minutes .
  • Then cover and cook very gently over low heat until vegetables have softened, 15-30 minutes , depending on size of chunks.
  • Stir with a wooden spoon from time to time.
  • Sprinkle with cornflour and stir in.
  • Gradually add chicken stock, then milk, stirring constantly.
  • Continue cooking, stirring, until soup thickens slightly and comes to the boil.
  • Remove from stove and cool for 10-15 minutes .
  • Process, blend or purée until smooth.
  • Return to saucepan and reheat over low heat.
  • Season to taste.
  • Stir in cream and serve in piping hot soup bowls.
  • I serve this with nice crusty rolls.

LOW FAT VERSION: I steamed my the pumpkin, parsnips, and carrots then sauteed the ongions,ginger, & spices in 1 tablespoon of olive oil & then added the steamed (mashed) vegetables and cooked on a low heat adding water if it started to dry out. I used skim milk & fat free broth. Instead of cream I served the soup with a spoonful of low fat sour cream. Low fat but still kept the excellent flavour. A must try. TIP: To remove the skin from the ginger I scraped it with the edge of a soup spoon.
     
  3. This is superb. The smell of the vegetables and ginger stir frying is 'wow'! My non eating vegetable son ate the lot, and that always makes me happy, lol Will definitely make this again.
     
  4. Yummo! The only thing I changed was that my daughter doesn't like curry powder, but she does like the taste of cumin, so I substituted. Instead of milk and cream, I just used a can of skim evaporated milk. Will definitely be on our winter recipe list.
     
  5. I just made this soup to serve my dinner guests. They all loved it, and everyone wants the recipe!!! Including my mother-in-law, so it has to be good, although I will be the one making it again for her!!! Just change the metric measurements over on this website. I wouldn't make any change to the recipe, it was perfect.

On my to do list is learning to quilt,knit fair isle and bottle preserves properly! I live at the Coast and have done so for the last 5 years,its certainly a slower pace of life here than when we lived in the city. There is something very restful about living so close to the Sea even the storms are spectacular to watch.One of My wishes is to spend a weekend in a Light house,preferably in rough weather! I,m also *Mum* to 4 dogs(all girls!)Millie the boxer,Jessie the cross border collie who is slightly mad to say the least!and my 2 little Jack Russells Molly and Mandy who have me running about all over the place I wish I had their energy!I,de bottle it and make a fortune!
