Pumpkin Bread With Grand Marnier Glaze

"Yummy and Rich! These loaves make really great Christmas gifts! The original recipe is by Judie Dresser, found in a fundraising cookbook La Jolla Cooks by La Jolla Country Day School. The original had nuts, but I can't eat them. It called for 4 cups shelled walnuts, chopped."

  • Preheat oven to 325.
  • Combine pumpkin, eggs, oil, water and sugar. Set aside.
  • Mix together flour, salt, soda, baking powder and spices.
  • Add to pumpkin mixture.
  • Stir in nuts.
  • Pour into THREE greased loaf pans.
  • Bake for one hour and 10 minutes or until toothpick inserted in center comes out clean.
  • Partially cool, then transfer to cooling rack.
  • Mix powdered sugar with Grand Marnier. Drizzle over tops of loaves.
