  • Combine. Mix well and drop by spoonfuls onto greased cookie sheet.
  • Bake at 350°F for 10-12 minutes.
  • Frosting: Boil first three ingredients together for 2 minutes.
  • Cool and add powdered sugar and vanilla.
  • Ice cool cookies.

  1. I followed the tips listed in other people's reviews and these turned out delicious!!! I was in a bit of a rush so I didn't have the time to make the icing (no time to wait for it to cool, etc), so I used a container of cream cheese icing, perfect!! I will totally be using this recipe again next fall!
     
  2. Maybe I expected more... they are okay but I am still on the search for a good pumpkin cookie. Sort of a boring cookie, and the frosting helped, but not quite what I was looking for. I made a batch for a gathering tonight, though, so I guess I'll see what they all say.
     
  3. I'm not even done making these yet - still in the baking process - but so far I'm having to force myself not to consume them as they roll out. So fluffy and delicious. I used half regular flour and half whole wheat, and earth balance spread instead of shortening. So good. They could use a little more spice, but that's easily remedied next time - and there will be a next time.
     
  4. These cookies were a hit at the holiday potluck, everyone loved them! The cookies were just like little cakes, and easy to make. The cookie by itself I would say was a bit plain and could've used a bit more spice; the frosting was way too sugary for my tastes, but combined together they made one heck of a scrumptious cookie!!!!
     
  5. These cookies are yummy! Just had to tweak the cooking times a bit. It required a few extra minutes than the recipe calls for.

Tweaks

  1. The most incredible cookies I have ever had!! I substituted margarine for the shortening (as I had no shortening). Also added some nutmeg and allspice. These are light and fluffy and literally melt in your mouth. Good with or without the icing. Thanks for the recipe hlk.
