  1. Light & yummy! This will be perfect to finish off the over-eating we all do at Thanksgiving!!!

  2. I made this as a pudding, just put it in a pretty bowl. Awesome flavor!!

  3. I felt the pie looked a little too plain so to dress it up I sprinkled toasted coconut on top.

  4. Great alternative to pumpkin pie! This one's a keeper.

  5. Delicious and easy! Better than traditional pumpkin pie! I will make this every Thanksgiving. I actually used almost 3 times the pumpkin pie spice called for in the recipe for a nice spiced pumpkin flavor.

I am a part time Preschool Director and mother of 2 wonderful children. I enjoy trying new recipes and recently have discovered cooking in the crock pot (what a time saver and great food to boot!) My husband is enjoying this as he loves traditional homestyle cooking. (I had never made a pot roast in our 13 years of marriage until 2 weeks ago!) I still, however, prefer cooking "non-traditional" meals. I am a creative type who likes to experiment with recipes, adding and deleting ingredients to see what will become of it!
