Pumpkin Spritz Cookies

  • Pre-heat oven to 400°F.
  • In a large mixing bowl beat butter until creamy, about 3 minutes. Beat in sugar and spices until well combined and the granules have begun to melt. Mix in pumpkin, egg and vanilla until well combined.
  • In a separate bowl, stir together flour and baking powder. Stir flour mixture into butter mixture until well combined.
  • Place into a cookie press and press out shapes onto an ungreased baking sheet.
  • Lightly sprinkle cookies with the spiced sprinkling sugar.
  • Bake 6 to 8 minutes or until set but not browned. Allow to cool 2 minutes on baking sheet then remove to wire racks to cool completely.

  1. I really had high hopes for this cookie. The dough would NOT stick the cookie sheet so I decided to chill for a bit, it STILL did not stick. I made them into balls instead and the bottom got brown and they taste like cardboard. I usually do not review but I am so annoyed with this
     
  2. Worst recipe I've ever made. Followed the directions to a tee, but the dough was a horrible consistancy and would NOT stick to the cookie sheet. Had to end up throwing out the whole batch.
     
  3. I made these the other day as part of my head start on Christmas baking. I got about 50 spritz out of a half batch. I chilled the dough prior to loading the cookie press and did not find the dough to be too sticky that way. Although the flavor gets better after they've had time to sit (I had one fresh out of the oven and then tried another after they had had a chance to sit overnight in the freezer), my husband and I both thought that the cookies need more sweetness in the actual cookie and a little more spice for our tastes. I do appreciate that they're a new variation on spritz and (as stated in the description) they're a good change from butter and cream cheese versions. Thank you for posting the idea!
     
  4. They taste good. I used half whole wheat flour so they would be a little dryer, and we had no problem with them being too sticky.
     
  5. great cookies, I did some spice amount adjustments, also the dough was a bit sticky so I had to add in a little more flour, after baking they were devoured quickly lol! thanks for sharing Mizz T!...Kitten :0
