  • In a large bowl, cream shortening, sugar, salt, pumpkin, extract, spice, and egg.
  • Add dry ingredients mix well.
  • Fold in toffee and nuts.
  • Drop by teaspoonfuls onto an ungreased cookie sheet.
  • Sprinkle with cinnamon sugar.
  • Bake at 375°F for approximately 12 minutes.
  • Cool on a rack.

  1. These cookies are great but I did add about 1/2 cup of extra flour to make the dough a little more managable.
